Today marks the start of “Better Breakfast Month”, which celebrates our morning meal and promotes healthy breakfast ideas. Eggs are a well-loved breakfast staple, so in honor of Better Breakfast Month, Hidden Villa Ranch and Contest Corner would like to give one reader four dozen Smart Balance™ Omega-3 Grade A Natural Large Eggs, so read on!
Egg safety is at the forefront of everyone’s minds right now after the massive product recall. I had to return 2 cartons of eggs to my local grocery store that were affected by the recall – some of which we had already eaten before finding out! Omega-3 Grade A Natural Large Eggs are a new product that Smart Balance just debuted, and according to their website, “Smart Balance Eggs are not involved in the current egg recall and are safe for consumption.” You can find up-to-the-minute information about the recent egg recall at the FDA’s website.
Smart Balance provided me with four free product coupons so that I could try these eggs for myself, but unfortunately they are not available in my area currently. However, the coupons don’t expire until 2015 (!!), so I’m sure I’ll be able to find them by then! My fave way to prepare eggs for breakfast is fried in bacon grease, I mean they’re super delicious! Oh and over medium too

Omelets with bacon, ham and mozzarella!
My family loves french toast, so I scramble the eggs in a bowl, take my bread..dip it into the egg and then flip it over. Fry it for just a few minutes. Serve with some freshly squeezed OJ. When the fresh berries are out we put a scoop of their choice, usually blue-berry or strawberry on top. Yum-Yum.
