Today marks the start of “Better Breakfast Month”, which celebrates our morning meal and promotes healthy breakfast ideas. Eggs are a well-loved breakfast staple, so in honor of Better Breakfast Month, Hidden Villa Ranch and Contest Corner would like to give one reader four dozen Smart Balanceâ„¢ Omega-3 Grade A Natural Large Eggs, so read on!

Egg safety is at the forefront of everyone’s minds right now after the massive product recall. I had to return 2 cartons of eggs to my local grocery store that were affected by the recall – some of which we had already eaten before finding out! Omega-3 Grade A Natural Large Eggs are a new product that Smart Balance just debuted, and according to their website, “Smart Balance Eggs are not involved in the current egg recall and are safe for consumption.” You can find up-to-the-minute information about the recent egg recall at the FDA’s website.

Smart Balance provided me with four free product coupons so that I could try these eggs for myself, but unfortunately they are not available in my area currently. However, the coupons don’t expire until 2015 (!!), so I’m sure I’ll be able to find them by then!   1. The Smart Balanceâ„¢ Mediterranean Light Taste Olive Oil would be great for using for fried, easy over eggs.

  2. I like to prepare my version of Egg McMuffins for breakfast–toasted English muffin, scrambled eggs, bacon/ham, cheese on top. Yum!

  3. The Smart Balance Omega Non-Stick Cooking Spray would be great for scrambling eggs, without adding a lot of fat and calories.

  4. My favorite way to prepare eggs for breakfast is to poach them for 3 minutes in chicken broth. Delicious!
